Bai Hao Yin Zhen, also known as Silver Needle, a highly sought-after white tea made in China’s Northern Fujian province. It was handpicked between March 15 and April 10 when the weather is dry with no rain and using only undamaged and unopened buds. Only the youngest buds are selected for production of white tea, giving the tea the white-silvery hair on its buds. The main difference between green and white tea is the production process, where white tea does not go through pan-frying, but instead allowed to dry up. It is preparing using traditional scientific techniques by adopting Fuding big white tea and big pekoe tea as raw material.
Bai Hao Yinzhen of the best quality is fleshy, bright colored and covered with tiny white hairs. The shape is homogeneous, with no stems or leaves. White tea has the most delicate flavor among all teas, it is milder, contains less caffeine and considered to have the most antioxidants out of all the teas. It flavor is refreshing, crisp and lasting. Taste is invigorated and delicious with oily nut notes and does not have an overwhelming tones or scent compared to other teas. Having more pronounced flavor, though also delicate. Like other white teas, Yin Zhen most likely is the best from white teas. That special tea has many positive health effects too. Because of high level content of antioxidants it enhances the protective properties of the body strengthening immune system, makes skin more young and beautiful and prevents harmful deceases. Also has an effect of reducing fever, removing internal heat, stabilizing blood pressure, detoxifying and purifying, removing radionuclides from the body.

Brewing Guide:

This tea is best prepared with water about 167F. Steeping is little longer than other white teas, up to 5 minutes. The liquor should be slightly viscous glittering pale yellow color with some of floating white hairs that reflect light. The taste of King grade is very mild.
