Taiwan Dong Ding Oolong

The Dong Ding Oolong, sometimes called Tung Ting Oolong, is one of the most famous Taiwanese oolongs. This high quality tea holds the leadership in tea market in Taiwan. Dong Ding Oolong tea traditionally made from one bud and two or three leaves with fermentation level around 30%, is also called “delicate elegant Oolong”. It is heavily baked for an extended period of time, resulting darker color. After steeping the liquor has amber or gold-amber color. The aroma possesses deep and resinous wood notes accompanied roasted grain, mesquite and fruit flavor. Sweet and roasted, with great depth and purity. The tea is well-balanced, deep and full of the rich toasty notes that oolong teas are loved for, with the pleasant fragrance and texture inherent to Taiwan oolong teas.

Brewing Guide:

We highly recommend brewing Dong Ding Oolong using Gongfu style to enjoy its flavor diversity.

Chinese Gongfu Way:
  • Rinsing time is around 5 seconds.
  • Water: 3oz/85ml 212F/100C
  • Use: 7 Grams Tea (1 tsp)
  • 7 steeps: rinse, 25s, 35s, 45s, 55s, 65s, 75s, 85s
Regular Method:

Preferably using teapot.

  • Use: 7 Grams Tea (1 tsp)
  • Steep: 3-8 mins
